Bacon. Pancake. Sandwiches. Am I right? Nothing says good ole’ American breakfast like some salty meat stuffed between two flapjacks with a side of maple syrup. Today’s recipe may not be the healthiest, but everyone needs to indulge from time to time. Food doesn’t just feed the body… it feeds the soul.

People have been using our pancake pans in creative ways for some time. The circular inlets can hold more than just pancake batter. They are great for cooking eggs, bacon, sausage patties, and any other miniature item that could use a good frying. We figured the best way to show this off would be making bacon and pancakes in the same pan without worrying about bacon grease overflowing, or pancake batter getting onto the bacon strips. It is literally the perfect way to create any type of breakfast sandwich — we dare you to prove us wrong.

But, enough chatter… let’s get to the recipe.

These bacon pancake sandwiches are truly decadent. We tried upping the WOW-factor by adding chocolate chips and bananas to the mix. You can put your own spin on it. However, a side of maple syrup for dunking is critical!

Makes: 8 Pancakes or 4 Sandwiches
Cook Time: 15 Minutes

Ingredients

  • 1⅓ Cups All-Purpose Flour
  • 1¼ Teaspoons Baking Powder
  • 4 Tablespoons Brown Sugar
  • 2 Eggs
  • 1 Cup Coconut Milk
  • 4 Tablespoons Butter, Melted
  • 1 Teaspoon Pure Vanilla Extract
  • Butter for the pan [Optional]
  • Dark Chocolate Chips [Optional]
  • Bacon
  • Bananas, Sliced for Topping (or your favorite fruit)
  • Maple Syrup (for dunking)

Directions

  1. Combine pancake ingredients in a mixing bowl [flour, baking powder, brown sugar, eggs, milk, butter, vanilla extract]. Stir until batter is smooth. Please note: this batter is pretty thick, which actually works well for our pancake pans. If you would like thinner, lighter pancakes, you can add more milk or water to the batter. [Optional: Add chocolate chips to the batter]
  2. Cut bacon strips into 2-inch sections. This will make the bacon fit better in the pancake pan inlets. Of course, you have the option to cook the bacon separately and add it to the sandwich later.
  3. Allow pan to get to medium temperatures. If you are cooking bacon with the pancake pan, start cooking the bacon first. Once the bacon is about halfway done, pour batter into a couple of neighboring inlets. You may butter the inlet right before adding the batter for additional flavor and coloring.
  4. Flip the pancakes using a rubber spatula. Cook bacon to desired doneness.
  5. Remove all food from the pan. Create your Bacon Pancake Sandwich! You can add bananas, or your fruit of choice, for a nice kick. If you are feeling really crazy, dunk the sandwich in some maple syrup!
